Talk of the Town: Holiday Recipes

For our holiday episode of Talk of the Town we taught you three great recipes. For our main course our producer Terri Tholen goes over how to cook a Turducken. As a side, Executive Director Alyson Dell Isola, shows us how to make a sweet potato Casserole. Lastly, for dessert, Producer Ali Areskog makes an avocado chocolate cake.

 

Terri's Turducken

 

Turducken

 

Turkducken Ingredients

 

10-12lb Turkey, Deboned (leave legs and wings)

5-6lb Duck, Completely Deboned

3-4lb Chicken, Completely Deboned

5-6 c. Your Favorite Holiday Stuffing

Metal Skewers

Large Roasting Pan

 

Instructions:

 

- Preheat oven to 300º

- Spread stuffing evenly over turkey cavity. 

- Place duck on top of bread stuffing, skin side down.

- Spread stuffing on top of open duck cavity.

- Top with chicken, skin side down.

- Spread stuffing on top of open chicken cavity.

- Skewer the back of the chicken closed, bring up the sides of the duck to cover the chicken. 

- Skewer the back of the duck closed.  Repeat with turkey. 

- Remove all skewers except on Turkey.

 

- Roast 3-4 hours until thermometer inserted in the center of chicken stuffing reaches 165º

- Baste once an hour with pan juices.

 

Finally, Let turducken rest 30 minutes before carving.

 

 

Alyson's Sweet Potato Casserole

 

 

Sweet Potato Casserole:

 

5 Sweet Potatoes Peeled & Cooked, Drain Water

1/3 c. Sugar

1/2 tsp Salt

1/3 Stick Melted Butter

1/2 c. Milk

2 Eggs

 

- Mix all of the above ingredients well. 

- Put in casserole dish.

-Follow the instructions below for the Sweet Potato Casserole Topping.

 

Sweet Potato Casserole Topping

 

1/3 c. of Melted Butter

1/3 c. of Flour

1 c. Brown Sugar

1 c. Chopped Pecans

 

- Mix ingredients

- Spread evenly over sweet potato casserole.

- Top with Mini Marshmallows. 

 

Bake Casserole at 350º for 45 minutes

 

 

Ali's Vegan Avocado Chocolate Cake

 

Avocado Chocolate Cake

 

 

Avocado Chocolate Cake Ingredients:

 

3 c. All-Purpose Flour

6 Tbsp. Unsweetened Cocoa Powder

1/2 tsp. Salt

2 tsp. Baking Soda

2 tsp. Baking Powder

2 c. Granulated Sugar

1/4 c. Vegetable Oil

1 Medium Soft Avocado, Mashed

2 c. Water

2 Tbsp. White Vinegar

2 tsp. Vanilla Extract

 

Baking Instructions:

 

- Preheat Oven to 350º

- Grease and Flour 2 eight or nine inch rounds. Set aside.

- Sift together all of the dry ingredients except the sugar, set aside. 

- Mix all of the wet ingredients together in a bowl, including the avocado.

- Add sugar to wet mixture and stir.

- Mix the wet with the dry all at once, beat with a whisk until smooth. 

- Pour batter into rounds.
- Bake 30-40 minutes.

- Let cake thoroughly cool before frosting.

 

Avocado Buttecream Frosting Ingredients: 

 

2 Medium Avocados, Mashed

2tsp. Lemon Juice

1lb Powdered Sugar, Sifted. 

1/2 tsp. Vanilla Extract

 

Frosting instructions: 

 

- Place avocado into a bowl, add lemon juice and whisk with a stand mixer or hand blender on medium speed until smooth.

- Add powdered sugar in batches and continue whisking. 

- Lastly, add vanilla extract.

- Spread evenly on cake cooled cake.
